Pacific Oysters, Direct from Willapa Bay
Harvested for your order. Delivered to your restaurant or retail store within 48 hours.
Willapa Wild supplies regenerative Pacific oysters to chefs, restaurants, seafood retailers, distributors and hospitality groups. Our direct model shortens the distance between the bay and the guest, protects the cold chain and gives every partner a clear story of place, method and care.
Most oysters moving through a conventional distribution chain arrive four to five days after harvest. Willapa Wild oysters arrive at the restaurant or retail store within 48 hours of harvest.
THE BENEFIT
More of the Oyster Reaches the Guest
An oyster is alive when it leaves the bay. Every additional handoff and day in transit spends part of its freshness before the shell ever reaches a chef, fishmonger or guest.
Our 48-hour harvest-to-door standard preserves more of what the bay and the oyster created: vitality, clean liquor, firm texture and the distinct character of the individual shell. The goal is not to make every oyster identical. Every oyster is unique. Our work is to help each one reach the table with its character intact.
DIRECT DELIVERY
Last-Mile Delivery, Managed by Willapa Wild
We do not consider the job complete when a box reaches a freight terminal. Where our delivery program is available, Willapa Wild coordinates the last mile from the arrival point to the restaurant or retail store.
This gives our partners:
- A direct chain of responsibility from harvest through delivery.
- Fewer handoffs and less time outside a managed cold chain.
- A known delivery window for receiving teams.
- A farm partner who remains accountable until the oysters reach the customer.
Last-mile availability depends on destination, route and order volume. We design the delivery plan with each partner before the first order.
THE WILLAPA WILD WAY
Quality Begins Before Harvest
Speed alone cannot create a remarkable oyster. Quality is shaped by where the oyster grows, how the habitat is treated, how the shell is handled and how quickly the living oyster reaches its destination.
Willapa Wild Pacific oysters are:
- Raised through low-disturbance, off-bottom farming methods.
- Harvested without dredging.
- Handled and graded with attention to the individual oyster.
- Kept within a disciplined cold chain after harvest.
- Delivered with a direct relationship to the farm that raised them.
The result is not a commodity with a sustainability story added later. It is an oyster experience in which farming method, freshness, habitat and service are connected.
WHAT WE SELL
Pacific Oysters for Professional Buyers
Our wholesale program offers live Pacific oysters for restaurants, retailers, seafood distributors and hospitality groups. Available sizes, quantities and harvest windows reflect current farm inventory and seasonal conditions.
Olympia oysters are not a commercial Willapa Wild product. We preserve, promote and grow the Pacific Northwest's only native oyster to help regenerate its presence in Willapa Bay. We do not offer Olympia oysters for sale.
FOR CHEFS
A Better Oyster Experience at the Pass
Chefs receive oysters closer to harvest, with fewer intervening handoffs and direct access to the people responsible for the product. We work with individual restaurants and multi-location groups to align sizing, order cadence, receiving requirements and delivery.
The farm story is useful because it changes the guest experience. Your team can explain where the oysters came from, why they are not dredged, how quickly they reached the restaurant and why each shell may express Willapa Bay differently.
FOR RETAILERS AND DISTRIBUTORS
Freshness Customers Can Understand
Retail and distribution partners gain a differentiated Pacific oyster with a concise benefit proposition: harvested for the order, delivered within 48 hours and supported by a transparent farming and stewardship story.
We can work with established receiving systems, fish totes, route delivery and other channel-specific requirements. The operating plan is built around volume, destination, delivery cadence and the customer's handling needs.
HOW IT WORKS
From Harvest Plan to Last Mile
- Define the need. Tell us the destination, volume, size preference and delivery cadence.
- Confirm availability. We match the order to current Pacific oyster inventory and an appropriate harvest window.
- Build the route. We confirm packaging, freight and last-mile requirements before the first shipment.
- Harvest for the order. Oysters enter the cold chain immediately after harvest.
- Deliver within 48 hours. The oysters reach the restaurant or retail store within 48 hours of leaving the bay.
